1 stick of butter
Yokes from 4 large eggs
1/2 cup heavy whipping cream
2 tbs lemon juice
1 tsp Dijon mustard
Melt butter in large glass mixing bowl.
Beat yokes until they are smooth, then mix in cream and lemon juice.
Add egg mixture to butter and stir well.
Microwave uncovered on high until slightly thick, 1-2 minutes stopping every 20 seconds to stir with fork. Do Not Let It Boil.
Remove from microwave and add in mustard. Stir and serve.
