Preheat oven to 400F
Cut off ends and any loose outer leaves
Mix with olive oil, salt, and pepper
Roast in glass pan for 25-40 minutes
Preheat oven to 450F
Cut 1 head cauliflower into bite size florets
Mix with olive oil, garlic, crushed red pepper, kosher salt, and 2 tsp thyme
Roast in glass pan 20 minutes
