8 cups water divided use
1/4 cup kosher salt
3 tsp sugar
1/2 tsp allspice (I used my Italian Seasoning)
2 tsp fennel
2 tsp peppercorn
1 bay leaf
2 cloves crushed garlic
1 tsp thyme
Boil 1 cup of water, put in large bowl, dissolve salt and sugar in water
Add all spices, then the remaining 7 cups of water
Place pork into brine making sure they're completely submerged
Cover and refrigerate at least 6 hours, or up to 24 hours
